Storing Olive Oil the Right Way



So you bought that expensive bottle of olive oil. You sampled it, loved it, and imagined what you would make with it. Wonderful! Enjoy it. But store it well to keep it as fresh for as long as possible.

1. Store your olive oil away from heat. Not in the cabinet above the stove.

2. Storing in the refrigerator is not ideal. Doing so puts 'stress' on the oil which will negatively affect its quality.

3. A cool, dry place, like the pantry, is best, ideally between 59 and 70 degrees.

4. A dark glass bottle or metal container is better than plastic for storage.

5. If you want to store it on the counter to get to it quickly, consider using a ceramic container with a pour spout.

6. Olive oil will not improve with age. Beware of buying the large economy size if you don't use it a lot. Unopened, it may last two years from the date of harvest. Of course, some bottles show only an expiration date. Some guides say to use it within a month, others say within six months.

7. Remember, like other oils, olive oil can go rancid. One week it is OK, and the next, not really. Give it the sniff test or a quick taste before you use it.

There are many olive oils on the market. Personally, I only buy those marked specifically as Extra-Virgin Olive Oil, along with these three words: First Cold Pressed. In my opinion, those are the best quality and there is a huge difference in taste. Plus, a little bit goes a long way.

First pressed means the olives were crushed and pressed only one time, which retains the highest quality and purity. Cold pressed means the olives never exceeded a certain temperature (around 80 degrees) during the entire process. The cooler the olives are kept, the higher the quality of the olive oil.
