Getting Unstuck



Hi Maria, Your newsletter is the ONLY newsletter I read religiously. Thank you for all your tips, ideas, and down-to-earth writing style. I appreciate you.

I have three tips to share with your readers, that all have to do with 'getting unstuck':

1) Before measuring out honey, syrup, or any sticky food ingredient, I coat the measuring cup/spoon in non-stick cooking spray first. I then pour the sticky ingredient onto the cup/spoon, and it slides right off into my mixing bowl. Makes for easy clean-up too.

2) I had a non-stick pan for a bit that foods suddenly began sticking to. The surface of the pan wasn't damaged, so I didn't want to get rid of it. My mom told me to do this: mix one cup water, two tablespoons of baking soda, and 1/2 cup white vinegar in the pan that has lost its stick, set on the stove, and heat until boiling for 10 minutes. I did this, and then washed the pot. Finally, I rubbed vegetable oil on the surface to re-season it. My pan is now like brand new, and has its non-stick properties again. Magic!

3) I like to make stir frys, but am not happy when the rice comes out too sticky...and I don't use rice often enough to invest in a slow cooker. I recently learned that sticky rice is often caused by insufficient water, using too small of a pot, excessive stirring, or a combination of these. So now when I cook rice, I use a large pot to ensure the rice isn't crowded, I use the amount of water the box indicates and I check often to be sure it isn't all evaporated before it is fully cooked (if so, I add a bit more water), AND I refrain from stirring it unless I'm checking for doneness. I'm having much better luck now and the rice comes out nearly perfect every time.
