Favorite Way to Store Fresh Berries



When picking up fresh berries, be careful they're super fresh right from the get-go. If you buy overripe, mushy berries, they're going to go bad quickly.

I just picked up the most beautiful, fresh raspberries and strawberries. To keep them tasting great for at least 5 days ahead, I removed them from their original packaging and placed them in a shallow container in a single layer, on top of a paper towel. The paper towel will soak up moisture so the berries don't mold. Don't stack berries on top of more berries. Keep the container lid slightly ajar and place in the refrigerator.

In addition, I don't wash them until right up to the moment when I'm about to use them.

  Recipe

Berry Chicken Salad



Ingredients:

4 boneless skinless chicken breast halves (4 oz each)
1/4 tsp salt
1/4 tsp pepper
1 pkg (6 oz) fresh baby spinach
1 c fresh raspberries
1 c halved fresh strawberries
2/3 c crumbled goat cheese
3 Tbsp chopped pecans, toasted
1/4 c prepared raspberry vinaigrette

1. Sprinkle chicken with salt and pepper. On a greased grill rack, grill chicken, covered, over medium heat or broil 4 inches from heat 4-7 minutes on each side or until a thermometer reads 165F.

2. While you're waiting for the chicken to cook, toast the nuts. To do so, bake in a shallow pan in a 350F oven for 5-10 minutes or cook in a skillet over low heat until lightly browned, stirring occasionally.

3. In a large bowl, combine spinach, berries, cheese and pecans. Cut chicken into slices; add to salad. Drizzle with vinaigrette and toss lightly to coat. Serve immediately. (Makes 4 servings.)
