____ 1. Cooking once, eating twice or more, and using the grill. With
busy summer days that are also hot, I like to spend less time in the kitchen
'slaving over a hot stove.' So each week, when I start planning menus and
preparing my grocery list, I try to see how I can make things easier and more
convenient. We often grill out on the weekend, and that is a great time to cook
extras to use during the week. For example, we might grill extra chicken
breasts, and use them for chicken salad or to add to a pasta salad. Extra
grilled hamburgers can be seasoned for tacos, burritos, spaghetti, etc. Bell
peppers are great for grilling and can serve not only as a side dish but can top
a pizza or be added to a salad another time. On busy days we often have a large
main dish salad for supper, using foods we have grilled ahead of time to top
them with. It's quick, easy and does not heat up the kitchen.
____ 2. A compost bucket. Like many people, I don't want vegetable and
fruit trimmings to just go into a plastic bag destined for the landfill. I also
like compost for my garden. A few years ago, my husband and I started our own
compost pile in a corner of the back yard for our kitchen plant scraps. Indoors
we tossed them in a large coffee can which we took out to our compost pile every
couple of days, but the can was not the ideal container. For one thing, the can
tended to rust, and it was hard to get all the scraps out of the bottom, so it
tended to get smelly. When we determined that we really were going to keep up
the compost practice, I started shopping for a better compost bucket. I found
the perfect one for us. Not too large, with a sleek, tidy appearance, the bucket
fits easily under the sink. The interior is smooth and curved, with no crevices
for things to get caught. While easy to open, the lid fits well and prevents
escaping odors. Finally, it is simple to clean, easily rinsed with the garden

____ 3. A really good beach tote. Summer brings time by the lake or the
swimming pool...or the beach if we are blessed with the opportunity to travel
east or west from Wisconsin. I was on the lookout for the perfect beach tote,
and this year, I found a great one. This mesh bag is large enough to hold
several towels, snacks, and beach reading. Multiple individual pockets keep
things organized. Convenient shoulder straps make the tote easy to transport,
and there are straps with key chain snaps so you won't find yourself digging for
your keys when the time comes to head home. The bag contains a waterproof inside
pocket, and the bottom is waterproof as well. Handily, the tote folds up well
too, making it packable to take for use on a distant vacation. Most of the time,
though, mine stays packed and ready to head to the pool.
