Hi Maria,

I've had a problem with my canning jars breaking in the freezer when I put chicken stock in them, and I always leave 2-3 inches of head space in the jar. I can't figure it out.

Hi Wendell,

Do your canning jars have 'shoulders?' I'm asking because these sometimes break in the freezer, even if you leave that extra space. If you are using jars with shoulders, try straight-sided jars instead...and only those freezer-approved. In addition, be sure you're completely cooling that chicken stock before putting it in the freezer. Good luck and keep me posted.

Hi Maria,

I love chopping on wooden cutting boards and I hate the plastic ones. But I'm now concerned about them since my mom told me to get rid of mine because wood cutting boards harbor bacteria. Your thoughts?

Hi Liz,

Last I heard, research has shown that wood cutting boards are no more likely to harbor bacteria than those made of plastic, even though that warning has been going around for years. However, if you're going to use wood, be sure you have two: one for meats, fish, and poultry and the other for vegetables, fruits, and bread...and be sure you don't cross-contaminate either. I'd recommend having two different looking cutting boards instead of the same color and style. Also, after use, wash very well in hot (not warm), soapy water. Remember too that any cutting board, wood or plastic, will deteriorate with age, so when yours is showing signs of wear (scarring), it's time to replace it. Your mom can definitely continue to use her plastic cutting boards as well...and she gets one luxury you don't...she can put hers in the dishwasher to clean them.
