My Favorite Baking/Cooking Hacks



Hi Maria,

I have two favorite baking hacks that I just learned this weekend. I wanted to share them with my fellow GONers!

1) I don't like softening butter in the microwave because it's never quite the consistency I want it to be when it comes out...it's either too hard, or melted all the way. What I do is take the amount of butter that requires softening out of my fridge, and, rather than keeping the stick (or half stick) whole, I slice it into smaller pieces. The smaller pieces soften more quickly than a whole piece.

2) I have stopped buying buttermilk, although I use it all the time to make pancakes. Instead, I add one tablespoon of lemon juice or vinegar to a measuring cup. Then, with plain milk (which I always have on hand), I continue to fill up to the 'one cup' line. I let it sit for five minutes and I have my own 'do-it-myself' buttermilk!
