Hi Maria,

My grandkids are over my house at least four days a week, due to the global pandemic. My daughter and her husband work, and I get to take care of the kids during that time...something I truly enjoy. They're both school-age and sweet, fun kids.

I remember, when your daughter was around kindergarten-age, you mentioned a fun lunchtime idea in your newsletter that involved a muffin tin. I know you have a teenager now (yes...I've been on your list THAT long!), but do you recall that tip, by any chance?

I'd love our time together to be extra special and give the kids some fun memories.

Hi Grandma Kay,

Thanks for asking and for being such a loyal subscriber for so many years. That's just amazing and wonderful! Yes, I actually still make muffin tin meals from time to time...believe it or not. You will need a '6 cavity' muffin tin for each person you're serving, and the muffin tin acts as the person's 'dish' so to speak. Then you just think up a theme and add food to each cavity before presenting it to the kids.

Here are some combinations:

Italian Theme:
Pasta
Meatballs
Mozzarella Sticks
Green Beans
Italian Bread
Salad

Lunch Box Theme:
Ham and Cheese Sandwich (cut in cubes)
Carrot Sticks
Celery Sticks
Ranch Dip or Dressing
Olives
Apple Slices

Breakfast Theme:
Scrambled Eggs
Toast (cut in strips)
Bacon or Sausage
Fruit
Yogurt
Granola

The possibilities are endless! This can even be fun for adults with hors d'oeuvres for a unique dinner starter.
